Mambhazha Pulissery (Mango Pulissery)


This is a delicous curry and very easy to prepare. The curry can be served as a side dish with rice for lunch.

Ingredients:
1. Ripe mango, cut into small pieces - 2 no.s
2. Red chili powder - 1/2 teaspoon
3. Water - 1 cup
4 Turmeric powder - 1/2 teaspoon
5. Thick yogurt / curd - 2 cups
6. salt - to taste

Grind to paste:
1. Grated coconut ( fresh ) - 1 cup
2. Jeera / cumin seeds - 1/2 teaspoon
3. Turmeric powder- 1/2 teaspoon
4. green chili - 2 no.s
For Seasoning:
1. Mustard seeds - 1 teaspoon
2. Fenugreek seeds / Uluva - 1/4 teaspoon
3. Dry red chili (whole) - 4 no.s
4. Curry leaves
5. Oil to fry
Method :
Cook the cut ripe mangoes in one cup water. Add red chili powder, turmeric powder and salt into it. Cook till mango pieces are well cooked and can be mashed. Mash a bit of the pieces. Meanwhile grind to a paste the ingredients listed to be ground with half the yogurt. At the end of grinding add 2 to 3 leaves of curry leaves into it. Add this to the cooked mango, mix well and cook for 2 minutes. Take off the stove. Whip the remaining yogurt and add to the pulissery. Mix well. Put salt as per taste.
Heat oil for seasoning in a pan. Add mustard and after it pops add fenugreek seeds, dry red chili and curry leaves. Add this seasoning to the pulissery.

Chicken Biryani


Chicken pieces- 1kg
Basmati rice -500 gms. Garam masala powde-r 4 tsp.
Milk- ½ cup
Garam masala -4 tbsp.
Butter 50 gms.
Sliced onions- 1 cup
Golden fried sliced onions- ¾ cup
Chopped garlic- 4 tbsps
.Rose Water -2 tbsps.
Chopped ginger- 4 tbsps.
Oil -5 tbsps
Red chili powder -3 tsps
.Salt To taste
Coriander powder -1 tbsp.
Saffron- ½ gm.
Turmeric powder -2 tsps.
Curd (yogurt)- 2 cup
Bay leaf -4 nos.
Chopped tomato- ¾ cup

Marinate chicken pieces .Mix salt, ½ of the red chili powder, ½ of the chopped ginger, ½ of the chopped garlic, 1 tsp. Garam Masala Powder, ½ of the turmeric powder and Curd/Yogurt. Mix well and put chicken pieces in this for an hour. Wash and soak basmathi rice in water for about 30 minutes.Boil water, add ½ of the Whole Garam Masala , bay leaf and salt and boil rice till ¾th done. Drain rice and keep aside. Heat oil in a thick bottomed pan. Add remaining Garam masala .Let it crackle. Add Sliced onions and sauté’ until light golden brown. Then add remaining chopped ginger, chopped garlic, coriander powder, turmeric powder, red chili powder, 1 tsp. Garam Masala powder and chopped tomatoes. Cook for about 5 minutes. Add marinated chicken and cook till chicken is tender. Dissolve saffron in warm milk and keep aside. . Arrange alternate layers of chicken and rice. Sprinkle saffron dissolved in milk, remaining Garam Masala powder, mint leaves, golden fried sliced onions and butter in between the layers and on top. Make sure that you end with the rice layer topped with saffron , rose water and spices. Cover and seal with aluminum foil . Cook in a preheated oven, for 10-12 minutes. Alternatively cook on an indirect slow flame for 10 to 12 minutes

Fresh Mango juice:

This is one of the tastiest and healthy drink in the summer. Just try this at home. Anyone can prepare within five minutes.

Ingredients:

Mango-two (medium size)
Sugar- eight table spoon
Cardamom- for taste
Cold Milk- four cup
Method:
Peel the mango and put the plum in the mixer. Add sugar and cardamom and operate mixer for two minute. Add cold milk and again mix the plum and milk for a minute. The tasty mango juice is ready to serve.

Welcome to my recipe

Hi Dear all,

Cooking is an art and being a girl I always dreamed of mastering this art. I learnt it from my late mother and she from Grandma.If you ask me exactly when my attention diverted towards it then i dont have an answer.

I had spent most of my time in the kitchen than playing with the children of my age during childhood days. I decided to create a blog for it after my friends insisted me to share the recipes I learnt from my Amma and some of my experiments.

This is my new blog created exclusively to share the recipes of various types of vegetarian and non vegetarian items I have been preparing and experimenting at home for the past fifteen years. I love to cook and serve it for my dear ones. I will be posting wide range of recipes ranging from spicy to sweet mouth watering dishes in the coming days :).
